Baked Dijon Salmon Fillets

    This is a delicious way of upping your omega-3 fatty acid intake. Salmon fillets are topped with Dijon mustard, seasoned breadcrumbs and melted butter before being baked.

    Serves: 4 

    • 4 (115g) fillets salmon
    • 3 tablespoons Dijon mustard
    • salt and pepper to taste
    • 4 tablespoons Italian-style dry breadcrumbs
    • 50g butter, melted

    1. Preheat oven to 200 C / Gas 6. Line a shallow baking tin with foil.
    2. Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet and season with salt and pepper. Top with breadcrumbs, then drizzle with melted butter.
    3. Bake in a preheated oven for 15 minutes or until salmon flakes easily with a fork.

    A really tasty way to eat salmon. Delicious with new potatoes and peas/mushroom mixed and cooked in butter.  -  06 Jul 2015


    We eat this all the time. Here is my tip, melt the butter in a sauce pan and then add the breadcrumbs. Stir for about one minute and then put onto the Salmon. This makes the topping crunchy and the butter is more evenly spread.  -  21 Jan 2008  (Review from Allrecipes US | Canada)
