About this recipe: This is a fantastic warm tofu sandwich that even tofu-haters will love. Smoked tofu, Cheddar, spinach, Parmesan and Ranch dressing are wrapped together in a wholemeal flour tortilla.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

This was really good for such a quick and simple recipe. I used plain tofu because I didn't have the flavored variety and I spiced it up by adding cumin and garlic powder. I didn't have any ranch dressing either so I used soy sauce and italian dressing. To keep the tortilla from cracking I followed one of the other reviewers advice and lightly cooked it in a pan before cooking in the microwave.
