Smoked tofu wrap

    This is a fantastic warm tofu sandwich that even tofu-haters will love. Smoked tofu, Cheddar, spinach, Parmesan and Ranch dressing are wrapped together in a wholemeal flour tortilla.

    Serves: 2 

    • 2 wholemeal tortillas
    • 215g smoked tofu
    • 70g grated mature Cheddar cheese
    • 30g fresh baby spinach
    • 1 tablespoon Ranch dressing
    • 1 tablespoon grated Parmesan cheese or to taste

    1. Place the tortillas side by side on a paper plate. Slice tofu and place slices down the centre of each tortilla. Sprinkle cheese over the tofu. Cover with a damp kitchen towel and heat in the microwave for about 45 seconds or until cheese is melted.
    2. Pile some spinach onto each tortilla and pour on some Ranch dressing. Sprinkle with Parmesan cheese, roll tortillas around the filling and enjoy.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

    This recipe was delicious. It was easy to make too. I couldn't find the hickory flavored tofu so I just used plain and it tasted fine. The dish really take the flavor of the salad dressing.     This was really good for such a quick and simple recipe. I used plain tofu because I didn't have the flavored variety and I spiced it up by adding cumin and garlic powder. I didn't have any ranch dressing either so I used soy sauce and italian dressing. To keep the tortilla from cracking I followed one of the other reviewers advice and lightly cooked it in a pan before cooking in the microwave.
