    This is a South African baked pudding and still my favourite. It's served warm from the oven with a vanilla custard-style sauce or you can have it with ice cream.

    Serves: 6 

    • For the pudding
    • 1 teaspoon baking powder
    • 125ml milk
    • 175g caster sugar
    • 2 eggs, beaten
    • 2 tablespoons apricot jam
    • 2 tablespoons margarine/butter, melted
    • pinch salt
    • 375g self-raising flour
    • For the vanilla sauce
    • 250ml water
    • 250ml single cream
    • 250g margarine/butter
    • 250g caster sugar
    • 1 teaspoon vanilla essence

    1. Preheat the oven to 180 degrees C and lightly grease a 2 litre ovenproof dish.
    2. Dissolve the baking powder in the milk. Stir in the sugar, beaten eggs, jam, butter, salt and flour. Mix well until there are no lumps.
    3. Pour the mixture into the baking dish and bake for 25 – 30 minutes (don’t use a smaller dish, even though it might look a little bit empty).
    4. Meanwhile, you can make the sauce by warming the water, cream, butter, sugar and vanilla until it begins to boil and thicken slightly.
    5. Pour the hot sauce over the baked pudding when it comes out of the oven. Let the sauce be absorbed, then serve with ice cream.
