    About this recipe: A traybake like no other, it'll be hard to stop yourself at just one of these banana cake squares! Studded with walnuts and topped with a buttery banana icing, this is sure to be a hit at cake sales and school fetes!

    Ingredients
    Serves: 24 

    • For the traybake
    • 100g margarine
    • 200g caster sugar
    • 125ml milk
    • 1 teaspoon vanilla extract
    • 200g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 very ripe banana, mashed
    • 1 teaspoon lemon juice
    • 60g chopped walnuts
    • For the icing
    • 30g butter, melted
    • 1 teaspoon vanilla extract
    • 240g icing sugar
    • 1/2 ripe banana
    • 1/2 teaspoon salt
    • 1/4 teaspoon lemon juice

    Method

    1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking tin.
    2. In a large bowl, cream together the margarine and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, bicarbonate of soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared tin.
    3. Bake for 25 to 30 minutes in the preheated oven, until a skewer inserted into the centre comes out clean. Let cool in the tin on a wire rack.
    4. Meanwhile, make the icing. In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, icing sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth.
    5. Spread the icing over the cooled traybake, then cut into squares or slices.

    I have used the recipe a few times. It doesn't seem to rise but tastes lovely. Maybe it needs eggs? The banana icing is delicious 😋 - 11 Jun 2016
