300g caster sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
250g mashed bananas
310g plain flour
1/2 teaspoon salt

In a large bowl, mix together butter, sugar, eggs and vanilla. Set aside.
In another bowl, sieve together flour, salt, bicarbonate of soda and baking powder. Add these dry ingredients to the creamed mixture. Add milk, lemon juice and bananas to the batter. Beat together well.
Line two 23cm round cake tins or one 20x30cm tin with greaseproof paper; the tins can be greased and floured instead, if desired. Bake at 180 C / Gas 4 for 17 to 20 minutes for the layered cakes or for 25 to 40 minutes for the tray.
