300g plain flour
250g caster sugar
2 1/2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon vanilla extract
3 bananas, mashed

Preheat oven to 190 C / Gas 5. Grease and flour a 20x30cm or similar sized baking tin.
In a large bowl, sieve together the flour, cornflour, sugar, baking powder, bicarbonate of soda and salt. Make a well in the centre and add margarine, eggs, vanilla and bananas. Beat 2 minutes at medium speed with electric mixer. Pour batter into prepared tin.
Bake in preheated oven for 25 to 30 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
