Yummy Banana Cake

    A delicious way to use up any over-ripe bananas you have lying around. The cake is incredibly moist and fruity. Enjoy as is, dust with icing sugar or top with cream cheese icing.

    Serves: 12 

    • 300g plain flour
    • 25g cornflour
    • 250g caster sugar
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 100g margarine
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 3 bananas, mashed

    1. Preheat oven to 190 C / Gas 5. Grease and flour a 20x30cm or similar sized baking tin.
    2. In a large bowl, sieve together the flour, cornflour, sugar, baking powder, bicarbonate of soda and salt. Make a well in the centre and add margarine, eggs, vanilla and bananas. Beat 2 minutes at medium speed with electric mixer. Pour batter into prepared tin.
    3. Bake in preheated oven for 25 to 30 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
