Easy Peasy Banana Cake

    This is a super-moist banana cake, which is very simple to make. For the best flavour, use over-ripe bananas that are almost fully black. Enjoy as a treat, snack or for afternoon tea.

    Serves: 12 

    • 250g caster sugar
    • 110g butter
    • 2 eggs, beaten
    • 1 teaspoon bicarbonate of soda
    • 4 tablespoons soured cream
    • 250g mashed bananas
    • 200g plain flour
    • 15g cornflour
    • 1 teaspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 23cm square cake tin.
    2. In a large bowl, cream butter and sugar until light. Add eggs and beat well. Dissolve bicarbonate of soda in the soured cream and add it to the butter mixture. Beat well. Add the mashed bananas and mix in. Add flour, cornflour and mix well. Stir in vanilla extract.
    3. Pour batter into prepared tin. Bake in preheated oven for 45 minutes or until a skewer comes out clean when inserted in the centre.

    but it only needed about 45 mins in my oven, so came out a little overdone. I didn't want to open the oven as worried it would sink. But 45 mins in a non-fan oven.  -  31 Jul 2012


    I made this for my husband last night and he loved it!!.. I didnt have cake flour so used all purpose..I made it in a bundt pan and then piped "Cream Cheese Frosting II" all over the top.. I then sprinkled some finely chopped walnuts to finish it off.. My husband likes cold cake so I put it in the fridge and he absolutely loved it!..
