About this recipe: This cake can be enjoyed as a snack, for afternoon tea, elevenses or dessert. It's moist, banana-ry and jam-packed with chocolate chips. For the ultimate treat, serve with whipped cream.

Makes: 24 bars

  • 175g butter
  • 125g caster sugar
  • 145g dark brown soft sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 250g mashed bananas
  • 225g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 170g plain chocolate chips

  1. Preheat oven to 180 C / Gas 4. Grease and flour a 25x38cm or similar size swiss roll tin.
  2. In a large bowl, cream butter, caster sugar and dark brown soft sugar until fluffy. Beat in egg and vanilla. Fold in mashed banana.
  3. In a separate bowl, mix flour, baking powder and salt. Fold flour mixture into butter mixture. Stir in chocolate chips.
  4. Spread in prepared tin and bake in preheated oven 20 minutes. Cool before cutting into squares.

Really light cake. Next time will try it with sultanas as I bet that would be a good alternative to chocolate chips - 19 Jan 2015


This tasted Fab cooked it in a Pyrex dish, served with custard or cream everyone asked for seconds....will be a regular now :0) - 02 Feb 2014
