Easy banana bread

    A fantastic quick bread, which makes use of over-ripe bananas. Its incredibly moist, fruity and utterly delicious. Enjoy for afternoon tea, elevenses or pop into packed lunches.

    Ingredients
    Makes: 1 loaf

    • 200g plain flour
    • 200g caster sugar
    • 50g butter, softened
    • 1 teaspoon vanilla extract
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder
    • 1 egg
    • 3 very ripe bananas

    Method
    Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 13x23cm loaf tin.
    2. Mash bananas and add flour, sugar, butter, vanilla, baking powder, bicarbonate of soda and egg. Mix well. Pour into loaf tin.
    3. Bake at 180 C / Gas 4 for 50 to 60 minutes or until skewer inserted into centre of cake comes out clean.
