    About this recipe: A simple, yet incredibly delicious cake, which is fruity and packed full of pecans. If you don't like pecans, you can use walnuts or chocolate chips. Enjoy thickly sliced.

    Ingredients
    Makes: 2 loaves

    • 225g plain flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 200g caster sugar
    • 60g chopped pecans
    • 2 eggs
    • 250g mashed bananas
    • 125ml vegetable oil
    • 1 teaspoon vanilla extract

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Preheat oven to 180 C / Gas 4. Grease and flour two 20x10cm loaf tins. Set aside.
    2. Sieve together flour, baking powder, bicarbonate of soda, salt and sugar. Stir in nuts, eggs, bananas, oil and vanilla extract.
    3. Pour into prepared tins. Bake for 45 to 60 minutes. Cool on wire rack for 10 minutes before removing from tins.

    Nice recipe, I just made 1 cake rather than 2 and it came out well in a round tin cooked for about 20 mins. Quite sweet because of the vanilla, but you can always leave that out or maybe add some spices if you wanted to play around with flavours.  -  03 Aug 2013

    This banana nut bread was moist and delicious. I increased the amount of banana to 1 3/4 cup(about 5 sm/med bananas)and added 1/2 tsp.cinnamon, and 1/4 tsp.nutmeg and used one loaf pan.     My family just loved this bread and I thought it was very easy to make. I did use only one loaf pan however. The cooking time was a lot longer than the recipe states. Once the outside of the bread browned the way we like it, I covered the top with foil and continued baking until a knife inserted in the center came out clean.
