Spiced Oat and Banana Cookies

    These wonderful soft cookies are a cinch to make. They are flavoured with banana, oats, cinnamon, cloves and walnuts. Enjoy as a snack or with a cuppa.

    Makes: 36 cookies

    • 150g margarine
    • 220g dark brown soft sugar
    • 1 egg
    • 125g mashed ripe banana
    • 1 teaspoon vanilla extract
    • 125g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 250g porridge oats
    • 60g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease baking trays.
    2. In a large bowl, cream together margarine and dark brown soft sugar. Beat in egg and mashed banana, then stir in vanilla. Combine flour, bicarbonate of soda, salt, cinnamon and cloves; stir into the banana mixture. Mix in oats and walnuts. Drop heaped spoons of the batter onto baking trays, leaving adequate room for spreading.
    3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking trays for 5 minutes before transferring to a wire rack to cool completely.

    Delicious,i only got 24 average size cookies out of the mix but that was probably my mistake as i'm just a beginner!  -  10 Oct 2012


    After 15 minutes in the oven and five minutes cooling on the tray I ended up with soggy uncooked lumps of dough.  -  23 Aug 2013


    They don't look overly exciting so added some melted chocolate on top. Quite tasty but I was concerned at the amount of salt and think I was right- definitely too salty for my taste! I used butter rather than margarine.  -  08 Feb 2016
