    About this recipe: These moist muffins are not only simple to make, but they also taste fantastic. Enjoy as a snack, for breakfast, brunch or afternoon tea.

    Makes: 12 muffins

    • 100g dairy-free margarine
    • 150g dark brown soft sugar
    • 1 egg
    • 1 banana, diced
    • 375g plain flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 300ml soya milk

    1. Preheat oven to 180 C / Gas 4. Grease a 12-hole muffin tin or line with paper cases.
    2. In a large bowl, cream together margarine and sugar. Beat in egg, then mix in banana until fully incorporated. Add flour, baking powder and bicarbonate of soda. Mix batter with spoon. Stir in soya milk, then spoon into muffin tin.
    3. Bake in preheated oven for 15 to 20 minutes, until a skewer inserted into centre of muffin comes out clean.
