100g caster sugar
110g margarine, softened
350g plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
350g mashed ripe bananas
2-3 plums, pitted and chopped

Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking dish.
In a large bowl, cream the sugar and margarine together until creamy, then beat in the eggs. In a separate bowl, sieve the flour with baking powder and bicarbonate of soda. Stir the flour mixture into the egg mixture in thirds, alternating with the bananas until the batter is smooth and well combined. Gently fold in the plums and pour into prepared dish.
Bake in the preheated oven until golden brown, about 1 hour.
