Cheddar, Basil and Tomato Toasties

About this recipe: These sandwiches are the perfect snack anytime of the day. Sandwiches filled with Cheddar, tomato, chilli and basil are pan-fried until golden.


Serves: 4 

  • 8 slices bread
  • 4 slices Cheddar cheese
  • 1 large tomato, sliced
  • 2 Scotch bonnet chillies, seeded and thinly sliced
  • 2 teaspoons dried basil
  • salt and pepper to taste
  • 30g butter

  1. Butter one side of each slice of bread and place 4 of the slices butter-side down on a large griddle pan over medium heat. (You can use a frying pan, but will need to cook them in batches).
  2. On each piece of bread, place one slice of cheese, one slice of tomato and a few slices of chilli. Sprinkle dried basil and salt and pepper to taste. Top each sandwich with a slice of buttered bread, butter-side up.
  3. Pan-fry sandwiches until golden brown, about 2 to 3 minutes each side.
