    About this recipe: An incredibly simple, yet delicious barbecued fish dish. Swordfish is seasoned with lemon juice, salt and pepper, then grilled on the barbecue.

    Serves: 2 

    • 2 (225g) steaks swordfish
    • 475ml milk
    • 1 tablespoon lemon juice
    • sea salt and freshly ground black pepper to taste

    1. Place the fish in a shallow dish and pour milk over them to cover. Let stand for 2 hours or refrigerate overnight.
    2. Prepare a barbecue for medium-high heat. Remove the fish from the milk and pat dry. Discard leftover milk. Season the fish with lemon juice, sea salt and pepper.
    3. Grill the fish until firm, about 15 minutes, turning once. Fish should appear white all the way through.

    Alternative cooking methods

    The swordfish can also be cooked under the grill or in a frying pan.
