    About this recipe: These delicious muffins are easy to make. You can dress them up with roasted red pepper, jalapeno chillies or cheese, if you desire. Enjoy with soups or stews.

    Makes: 12 muffins

    • 120g dry polenta or cornmeal
    • 125g plain flour
    • 5 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 egg, beaten
    • 4 tablespoons rapeseed oil
    • 250ml milk

    1. Preheat oven to 200 C / Gas 6. Grease muffin tin or line with paper cases.
    2. In a large bowl, mix together polenta, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin tin.
    3. Bake at 200 C / Gas 6 for 15 to 20 minutes or until a skewer inserted into a muffin comes out clean.

    I made this recipe today!!! It turned out delicious... I tweaked this recipe adding some bacon, grated cheese and corn and to make it more fluid: a bacon and some milk. I'm really happy with my breakfast muffins. - 11 Jun 2014
