    About this recipe: Moist, comforting banana walnut bread - you'll never know it's low fat!

    Ingredients
    Serves: 12 

    • 2 eggs
    • 150g (5 oz) caster sugar
    • 2 very ripe bananas, mashed
    • 4 tablespoons apple sauce or purée
    • 5 tablespoons skimmed milk
    • 1 tablespoon olive oil
    • 1 tablespoon vanilla extract
    • 225g (8 oz) plain flour
    • 1 dessertspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 30g (1 oz) chopped walnuts

    Method

    1. Preheat oven to 160 C / Gas mark 3. Line a loaf tin with baking parchment, and lightly dust with flour.
    2. In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes. Beat in bananas, apple sauce, milk, oil and vanilla.
    3. In a separate bowl, sift together flour, baking powder, bicarbonate of soda and salt. Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts. Pour batter into prepared pan.
    4. Bake in preheated oven until golden and a cocktail stick inserted into centre of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

    The picture for this cake doesn't look much but everyone I've made this for love it. Its not too sweet so caters for all tastes. Will definately make again. - 27 Aug 2012
