Spiced beer cake

    This quick and easy cake recipe gains loads of flavour with an array of aromatic spices, such as cinnamon, cloves and allspice, as well as a healthy dose of beer! Baking with beer lends something special to the cake without overpowering it.

    • 110g butter or margarine, softened
    • 220g dark brown soft sugar
    • 1 egg, beaten
    • 200g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cloves
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground allspice
    • 1/2 teaspoon bicarb of soda
    • 1/4 teaspoon salt
    • 250ml beer

    1. Preheat oven to 190 C / Gas 5. Grease and flour a 2 lb loaf tin. Sift together flour, baking powder, cloves, cinnamon, allspice bicarbonate of soda and salt. Set aside.
    2. In a large bowl, cream the butter and dark brown soft sugar until light and fluffy. Add egg and beat well. Add flour mixture alternately with beer and mix well to combine.
    3. Pour into loaf tin. Bake in the preheated oven for 40 to 50 minutes, or until a skewer inserted into the cake comes out clean.
