    Serves: 4 

    • 225g (8 oz) mangetout or sugar snap peas
    • 1 tablespoon olive oil
    • 1 shallot, chopped
    • 1 teaspoon chopped fresh thyme
    • salt to taste

    1. Preheat oven to 230 C / Gas mark 8.
    2. Spread mangetout in a single layer on a medium baking tray, and brush with olive oil. Sprinkle with shallots, thyme and salt.
    3. Bake 5 minutes in the preheated oven, until tender but firm.
