5 tablespoons rice wine
5 tablespoons sesame oil
4 tablespoons soy sauce
2 tablespoons honey mustard
4 tablespoons dark brown soft sugar
2 dashes liquid smoke flavouring
2 1/2 teaspoons Italian seasoning
1 tablespoon grated orange zest
1 teaspoon ground ginger
2 teaspoons paprika
1 teaspoon fines herbes
1 whole chicken, skin removed, cut into pieces
6 sprigs fresh rosemary

In a large shallow dish, combine water, wine, sesame oil, soy sauce, mustard, dark brown soft sugar and liquid smoke. Stir in Italian seasoning, orange zest, ginger, paprika and fines herbes. Place chicken in the dish, and turn to coat. Cover, and refrigerate overnight.
Preheat an outdoor barbecue for medium heat, and lightly oil grate.
Discard marinade. Barbecue chicken 15 to 20 minutes per side, until no longer pink and juices run clear. Occasionally place rosemary sprigs on coals to impart a unique smoky flavour to chicken.
Liquid smoke flavouring
Liquid smoke flavouring is available online or in some specialty shops. In a pinch, you could skip it in this recipe and still get delicious results.
Fines herbs - a Mediterranean mainstay - is typically a combination of fresh parsley, chives, tarragon and chervil. Compensate with whatever you have in your cupboard in a pinch!
