Peach and Nectarine Muffins

    A unique combination of peach and nectarine makes these muffins special. Try them in summer when peaches and nectarines are in season. They're delicious warm from the oven or at room temperature, but they won't last long!

    Serves: 8 

    • 200g plain flour
    • 150g caster sugar
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 75ml vegetable oil
    • 1 egg
    • 75ml milk
    • 1 large ripe peach - peeled, stone removed and diced
    • 1 very ripe nectarine, stone removed and diced
    • 1 tablespoon dark brown soft sugar

    1. Preheat oven to 200 C / Gas 6. Grease 8 muffin cups or line with paper muffin cases.
    2. In a large bowl, combine flour, sugar, salt and baking powder. Add vegetable oil, egg and milk; mix well. Fold in diced peach and nectarine. Fill each muffin tin to the top with muffin mix. Sprinkle a little dark brown soft sugar onto the top of each muffin.
    3. Bake in preheated oven for 18 to 20 minutes. Check muffins regularly after 15 minutes of baking. Serve warm or cool.

    I made these with 2 nectarines, some vanilla extract and in a fairy cake tin so the batter made 11 small cakes. The cakes were so moist and really delicious. Next time I wouldn't put the sugar on top as they were sweet enough without.  -  21 Aug 2013

    Nice recipe very easy,made to use up 2 nectarines I had in fridge.I made 12 muffins with these ingredients they were a decent size too,depends how large you like them I suppose.They were very light and moreish I also omitted sugar on top .  -  16 Oct 2013
