Seeded chocolate energy bars

    An easy, healthy and yummy no-bake snack that kids will devour in no time. Loaded with grains and seeds. Also very forgiving - substitute other ingredients for the cereal part, such as ground or chopped nuts, flax seeds, etc. Or, if you don't have enough of one ingredient, just add more of another.

    Serves: 15 

    • 50g unsweetened cocoa powder
    • 50g crisp rice cereal
    • 120g porridge oats
    • 100g desiccated coconut
    • 100g sesame seeds
    • 120g sunflower seeds
    • 200g peanut butter
    • 170g dark brown soft sugar
    • 275g honey
    • 1 teaspoon vanilla extract

    1. In a large bowl, combine the cocoa powder, rice cereal, oats, coconut and seeds. Set aside.
    2. In a saucepan over medium heat, stir together the peanut butter, dark brown soft sugar, honey and vanilla. Cook and stir until melted and loose. Pour over the cereal mixture, and stir to coat evenly. Press lightly into a buttered 20x30cm baking dish. Cool for about 1 hour to firm, then cut into squares.

    Very quick and easy to make. I think my scales are off so my quantities were a bit different, but the bars still tasted gorgeous. Probably not very healthy with all that sugar and honey, but whatever!  -  05 Nov 2013
