Blackberry sponge

    This is a simple cake with a layer of blackberries at the bottom and a light cinnamon-spiced sponge on top. Easy to make and great for blackberry season. If you don't have mace to hand, simply use nutmeg.

    Serves: 16 

    • 3 tablespoons butter
    • 200g caster sugar
    • 1 egg
    • 200g sifted plain flour
    • 1/2 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 1/2 tablespoon ground cinnamon
    • 1 pinch ground mace or nutmeg
    • 2 tablespoons vinegar
    • 75ml apple juice
    • 180g fresh blackberries

    1. Preheat oven to 170 C / Gas 3. Lightly grease one 20cm square baking tin.
    2. In large bowl beat the butter and sugar together until light and fluffy. Add the egg and beat well.
    3. Combine the flour, salt, bicarb, cinnamon and mace or nutmeg. Add the flour mixture to the sugar mixture and stir to combine. Mix in the vinegar and juice. Fold in the blackberries.
    4. Tip the mixture into the prepared tin and bake at 170 C / Gas 3 for 35 to 40 minutes. Let cool in tin and serve warm or at room temperature.

    Was there something missed out on the instructions. I couldnt find anywhere where it said what to do with the suger. Was it to be added to the butter and egg?  -  22 Aug 2012
