Peanut Butter Blondies

    Blondies are 'blonde' brownies, and these in particular are flavoured with peanut butter, then topped with a peanut butter icing. A very moist and rich treat that kids will especially love! Top with grated chocolate for a pretty presentation.

    • 440g plain flour
    • 2 1/4 teaspoons baking powder
    • 3/4 teaspoon salt
    • 175g butter, softened
    • 325g dark brown soft sugar
    • 150g caster sugar
    • 3 eggs
    • 1 egg yolk
    • 2 teaspoons vanilla extract
    • 6 tablespoons peanut butter
    • 340g plain chocolate chips
    • 110g butter, softened
    • 260g peanut butter
    • 350g icing sugar
    • 75ml milk

    1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking dish. Sift together the flour, baking powder and salt; set aside.
    2. In a large bowl, cream together 175g of butter, dark brown soft sugar and caster sugar until light and fluffy. Beat in the eggs and yolk one at a time, then stir in the vanilla and 6 tablespoons peanut butter. Blend in the sifted ingredients and stir in the chocolate chips. Press the mixture evenly into the prepared dish.
    3. Bake in the preheated oven for 25 to 30 minutes, or until a skewer inserted into the centre comes out with moist crumbs. Cool completely before icing.
    4. To make the icing, mix the remaining 110g of butter and 260g peanut butter together in a medium bowl. Mix in the icing sugar until smooth, then gradually stir in milk until a spreadable consistency is reached. Cut, serve and enjoy!

    I had some leftover peanut butter frosting and walnuts from another cake I baked so followed the blondie recipe but halved the ingredients (use 2 whole eggs and one yoke) plus added 75g of chopped walnuts which worked really well with the crunchy peanut butter.  -  05 May 2017


    these are absolutely great!!! I love these - I made them for a party and when I was trying it I decided to eat all of it alone. The frosting is the best!!! Try it!!!
