Brandied Pecan Pie

    Pecan pie is delicious as it is, but the addition of brandy takes this version to another level. Quite easy to make, especially if you use a shop-bought pastry case. Serve with a scoop of quality vanilla ice cream.

    Serves: 8 

    • 2 eggs, beaten
    • 125ml single cream
    • 150g caster sugar
    • 2 teaspoons plain flour
    • 1/2 teaspoon salt
    • 1 tablespoon treacle
    • 350g golden syrup
    • 1 teaspoon vanilla extract
    • 1 1/2 tablespoons brandy
    • 120g coarsely chopped pecans
    • 1 (23cm) unbaked pastry case

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, beat eggs together with cream. Mix in sugar, flour, salt, treacle, golden syrup, vanilla and brandy. Stir in pecans. Pour into pastry case.
    3. Bake in preheated oven for 40 to 50 minutes, or until done.

    When I made this pie I soaked the pecans in the beandy then toasetd them in the oven on 350 for ten mins. It amped up brandy and pecan taste.  -  22 Nov 2005  (Review from Allrecipes US | Canada)
