Creamy Caesar salad

    Anchovies ensure this creamy Caesar salad is loaded with flavour. The homemade garlic croutons are essential! A great way to use up old bread. Serve this as a starter or make it into a meal with the addition of chicken or salmon.

    Serves: 6 

    • 6 cloves garlic, peeled
    • 8-10 tablespoons mayonnaise
    • 5 anchovy fillets, minced
    • 6 tablespoons grated Parmesan cheese, divided
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon Dijon mustard
    • 1 tablespoon lemon juice
    • salt and pepper to taste
    • 4 tablespoons olive oil
    • 250g day-old bread, cubed
    • 1 romaine lettuce, torn into bite-size pieces

    1. Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use.
    2. Heat oil in a large frying pan over medium heat. Cut the remaining 3 cloves of garlic into quarters, and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until lightly browned. Remove bread cubes from oil, and season with salt and pepper.
    3. Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and seasoned bread cubes.

    Dear ladies and gents this is fabulous recipe!I am very selective and hard to please when it comes to dressings. I never buy in stores simply because they don't have the right taste whatever it may be. I was brought up on home cooking and home cooking it is for my family too This dressing is the best I ever tried and not going to look for any other! Not just me but my whole crew loves it.     Lovely sharp tangy Caesar dressing. But - 8-10 tablespoons mayo? I used 3 and stopped there and felt it still too thick so had to thin with milk. But will do again with my tweak. Was enjoyed by all.  -  10 Jun 2013
