Easy Cajun BBQ Chicken

    Four simple ingredients come together for an easy BBQ chicken recipe that is full of flavour. Just factor in marinating time, and once you heat up the BBQ you're tasty chicken is ready in no time.

    Serves: 6 

    • 4 tablespoons vegetable oil
    • 125ml white wine
    • 2 tablespoons Cajun seasoning
    • 6 skinless, boneless chicken breast fillets

    1. In a bowl, mix the oil, white wine and Cajun seasoning. Place chicken in the bowl, and coat with the mixture. Cover, and refrigerate for at least 3 hours.
    2. Preheat the barbecue for high heat.
    3. Lightly oil the barbecue grate. Discard marinade, and place chicken on the barbecue. Cook for 6 to 8 minutes on each side, until juices run clear.

    I wish I had mentioned when I first submitted this recipe that I use a Cajun Spice Blend that I buy through Atlantic Spice Company. It's SO much more flavorful than anything you can buy at the grocery store! I buy it by the pound for around $5. I ran out of it once and tried using the store-bought kind, but ended up using the entire bottle and it STILL wasn't that flavorful!     This is one of the simplest and best tasting chicken marinades ever! I used Simple Cajun seasoning from this site, olive oil vs. vegetable (less oil than called for) pounded three chicken breasts down thin and let this marinate all day.
