Coconut Walnut Squares

    This traybake is heavenly. A rich shortbread base is topped with a combination of brown sugar, walnuts and coconut for loads of gooey, chewy goodness. Cut into small squares, these are great for cake sales or afternoon treats.

    Ingredients
    Serves: 16 

    • 110g dark brown soft sugar
    • 125g plain flour
    • 110g butter or margarine, melted
    • 1 teaspoon vanilla extract
    • 220g dark brown soft sugar
    • 2 tablespoons plain flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 120g chopped walnuts
    • 75g desiccated coconut
    • 4 tablespoons icing sugar for dusting (optional)

    Method

    1. Preheat the oven to 190 C / Gas 5. Grease a 20cm square baking tin.
    2. In a medium bowl, stir together 110g dark brown soft sugar and 125g flour. Stir in the melted margarine and vanilla until well blended. Press into the bottom of the prepared tin.
    3. Bake for 15 minutes in the preheated oven. Prepare the filling while the base bakes. In a medium bowl, beat eggs until light and foamy. Blend together the dark brown soft sugar, flour, baking powder and salt; stir into the eggs. Mix in the walnuts and coconut. Pour over the base and return to the oven.
    4. Bake for 15 more minutes in the preheated oven, until set. When cool, cut into squares. Dust with icing sugar to serve, if desired.

    Back in the fifties when I grew up, dream bars were an actual fad. My mom was a professional baker and made the best dream bars ever. Unfortunately, I don't have her recipe and my mouth was watering when I found this one. However, it was a huge disappointment. It is nothing like the original which were chewy and not so terribly sweet and sticky. I believe this recipe has too much sugar and not enough flour. The base has so much sugar that it gets too hard. The other ingredients are probably about right. I would like to see someone come up with one of the more satisfactory old recipes.     These bars turned out just fine....but the flavor was lacking - non-descriptively just "sweet". Next time, I'll add some sort of "chips" - choc, pb, or cinnamin perhaps.  -  28 Jul 2001  (Review from Allrecipes US | Canada)
