Carol's Mars® bar cake

    A yummy cake featuring everyone's favourite chocolate bar. This recipe makes two layers, which you can then ice with your favourite icing. There's a toffee frosting recipe on this site which would work a treat. Especially great for kids' birthday parties.

    Ingredients
    Serves: 20 

    • 285g cake flour
    • 1 teaspoon baking powder
    • 1/8 teaspoon salt
    • 150g butter or margarine
    • 300g caster sugar
    • 1 1/2 teaspoons vanilla extract
    • 250ml milk
    • 5 egg whites
    • 4 Mars® bars

    Method
    Prep:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Preheat oven to 190 C / Gas 5. Grease and flour two 20cm round cake tins.
    2. Sift cake flour and combine with baking powder and salt. Set mixture aside.
    3. With and electric mixer, beat butter, sugar and vanilla until fluffy. Add flour mixture and milk alternately to the butter mixture.
    4. Beat egg whites until stiff peaks form. Fold egg whites into flour mixture then fold in chopped chocolate bars. Pour cake mixture into prepared tins.
    5. Bake for 20 minutes. Let cakes cool in tins for 10 minutes then remove from tins.

    Not sure if I did something wrong in the mixing, but the large volume of milk made my mixture so sloppy that it took an hour to cook! 250 ml of milk seems an awful lot. As a result, the mars bar bits ended up very brittle. Mars bar icing was a nice addition for the topping.  -  24 Jul 2016

    This was a delicious and moist cake!! I put freshly whipped cream and caramel sauce in between the cakes and topped it off with more cream and caramel sauce after putting the cakes together. Everyone loved it!!  -  20 Aug 2001  (Review from Allrecipes US | Canada)
