Chocolate fudge frosting

    A fantastically rich chocolate fudge frosting. This will work a treat on your favourite cakes and cupcakes, and is perfect for birthdays. Use a good baking chocolate, or very dark chocolate with 70% or more of cocoa.

    Serves: 12 

    • 110g butter
    • 90g baking chocolate
    • 425g icing sugar
    • 1/2 teaspoon vanilla extract
    • 175ml milk, or as needed

    1. Melt chocolate and butter in the microwave, or in the top of a double boiler. In a large bowl, combine icing sugar, vanilla and 120ml of the milk. Blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved (you may not use all of the milk).
    2. Let stand until spreadable (frosting will thicken as it cools). Spread on cooled cake.


    The frosting may seem too runny to pipe at first, but it will thicken as it cools. Ensure you allow the frosting to cool sufficiently. To thicken the frosting further, you can add additional icing sugar, about 25g at a time, till your desired consistency is reached.

    Didn't work for me. far too runny and I didn't use even half of the milk. Didn't get thicker even putting in the fridge didn't help. Looking for a recipe like Betty Crocker's choc Fudge icing; one I can pipe onto cupcakes.  -  27 May 2013


    I wanted a chocolate fudge topping for cupcakes. I like the look of this in the picture but in the end decided to coat the top of the cakes whilst the mix was warm. It gave a lovely smooth glossy finish, looked very porfessional. There was a lot of mix left after covering 12 cakes, so I have put it in the fridge, I will try to warm it in the microwave to reuse.
