Sea bass fillets with prawn and crab sauce

    An impressive yet easy way to make something really special out of sea bass fillets. All the ingredients are easily available in the supermarket, and the preparation is very simple. Really delicious! Serve with rice and green veg.

    Serves: 4 

    • 4 (110g) fillets sea bass
    • sea salt and ground black pepper to taste
    • 110g butter
    • 3 tablespoons light olive oil
    • 2 shallots, minced
    • 1/2 teaspoon minced garlic
    • 3 tablespoons chopped fresh parsley
    • 3 tablespoons plain flour
    • 225ml single cream
    • white pepper to taste
    • 450g cooked and peeled prawns
    • 1 (170g) tin crab meat, drained

    1. Preheat an oven to 180 C / Gas 4.
    2. Season the sea bass with salt and pepper; arrange in a baking dish and set aside.
    3. Melt the butter with the olive oil in a frying pan over medium-low heat. Cook the shallots, garlic and parsley in the melted butter and olive oil until softened, about 5 minutes. Add the flour and stir continually until completely incorporated into the mixture and the liquid is smooth. Pour the cream into the mixture whilst stirring; cook and stir until thickened. Season with the white pepper. Gently fold the prawns tails and crab meat into the mixture, taking care to not break the crab meat too much; cook another 1 minute. Spoon the mixture over the sea bass fillets.
    4. Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes. Serve immediately.

    This was an incredible dish that did not last long on our plates! I did not have cream so I used milk instead and the sauce came out fine. I also could not find crawfish and stuck with immitation crab.
