This is a great carrot cake recipe that is easy to make. It calls for self-raising flour, carrots, walnuts and cinnamon - no other spices, pineapple, raisins, etc. The Cream cheese icing is also easy to make and really delicious. Feel free to reduce the amount of sugar in the cake if you prefer your cakes less sweet.
You can easily halve the amount of sugar to 200g for a less sweet cake.

AMAZING - I put a bit less sugar for the icing as I didn't have any and put half caster sugar and half brown sugar for the cale itself, only had a bit over 100g walnuts but still spot on!! - 13 Jun 2011
I really enjoyed making this and I thought it tasted amazing. I made it for Sunday lunch when some guests came over and they even took some home with them because they thought it was so lovely!! I do not like cinamon at all but I still put it in and I loved the cake. The cinamon is not very strong and for my guests I would have put a little more in. I did not do the icing as it says as I found a nicer recipe for it. I put all the ingredients in the icing as it says on tus recipe but I also put honey in it and it tasted amazing!!!
