Cassie's courgette brownies

    Courgette ensures that these brownies turn out terrifically moist. No one will ever guess there's courgette in these - not even the kids! A really nice recipe, especially when you've a glut of courgettes.

    Serves: 24 

    • 250g plain flour
    • 1 teaspoon salt
    • 1 1/2 teaspoons bicarbonate of soda
    • 5 tablespoons unsweetened cocoa powder
    • 200g caster sugar
    • 2 eggs
    • 250g grated courgette
    • 120ml vegetable oil
    • 1 teaspoon vanilla extract
    • 60g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease a swiss roll tin.
    2. In a large mixing bowl, sift together flour, salt, bicarb, cocoa and sugar. Combine eggs, courgette, oil, and vanilla; blend into dry ingredients. Stir in walnuts.
    3. Bake for 20 minutes in preheated oven. Cool in the tin, and then cut into squares.

    I just added 20g more walnuts and 10 minutes longer to the cooking time,absolutely delicious.  -  26 Aug 2013


    These are honestly so easy, so moist, so chocolatey - and the ultimate way to cook off that courgette glut!! I had to cook for 12 mins more to get centre cooked but that was due to my tin. Try it - no disappointments here!  -  03 Jul 2011


    I did not have swiss roll tin so made mine as muffins. Lovely and very moreish.  -  19 Jul 2012
