    About this recipe: The entire family will love this quick and easy baked fish dinner. Fish fillets are coated in a Parmesan crust, then baked to perfection. Serve with a green salad and chips or rice. Use cod, sea bass or sole if desired.

    Serves: 8 

    • 1 egg
    • 1 tablespoon milk
    • 75g grated Parmesan cheese
    • 150g plain flour
    • 1 1/2 teaspoons salt
    • 1 1/2 teaspoons ground black pepper
    • 1 teaspoon paprika
    • 8 (110g) fillets tilapia
    • 50g butter or margarine, melted

    1. Preheat oven to 180 C / Gas 4.
    2. Beat the egg together with the milk in a medium bowl. In another bowl, stir together the cheese, flour, salt, pepper and paprika.
    3. Dip fish in the egg and milk mixture, then dredge in the cheese mixture until coated. Arrange fish in a single layer in the bottom of a baking dish. Pour melted butter over the fish.
    4. Bake for 15 minutes, or until golden brown.
