Chocolate chip cherry cake

    A simple yet lovely cake which is studded with chocolate chips and cherries. You can use chopped plain chocolate instead of the chips, if desired. You could also try white chocolate instead for a twist. Simply enjoy as is without any icing, or dust with a little bit of icing sugar for a pretty presentation.

    Serves: 12 

    • 250g plain flour
    • 1 teaspoon ground cinnamon
    • 150g caster sugar
    • 1/8 teaspoon salt
    • 175ml vegetable oil
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 1 teaspoon bicarbonate soda
    • 1 1/2 (410g) tins cherry fruit filling
    • 175g plain chocolate chips

    1. Preheat the oven to 180 C / Gas 4. Butter and flour a bundt cake tin or 25cm tube cake tin.
    2. In a bowl, combine the flour, sugar, oil, eggs, vanilla, bicarb, cinnamon and salt. Mix well. Stir in the cherries and the chocolate chips. Pour the cake mixture into the prepared tin.
    3. Bake for about 1 hour, until a cake tester inserted in the centre comes out clean. Cool on rack and remove from the pan to cool completely.

    We found this cake way too heavy for our tastes. Presentation was an issue because the texture seemed terribly uneven and I wasn't happy with that at all. Flavors were good but probably won't make this one again anytime soon. Sorry.  -  19 Apr 2003  (Review from Allrecipes US | Canada)
