Cherry walnut oatmeal cookies

    Lovely chewy oatmeal cookies with the addition of cocktail cherries and walnuts. If you don't have cocktail cherries, you could use glace cherries and then use a tablespoon of water, milk or even rum for the cherry juice.

    Serves: 36 

    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 100g margarine
    • 110g butter
    • 300g caster sugar
    • 2 eggs
    • 1 tablespoon cocktail cherry juice
    • 1 teaspoon vanilla extract
    • 160g porridge oats
    • 125g cocktail cherries, drained and chopped
    • 120g chopped walnuts

    1. Preheat oven to 180 C / Gas 4.
    2. Sift together flour, bicarbonate of soda and salt.
    3. In a separate bowl, cream together margarine, butter, sugar, eggs, cherry juice and vanilla. Stir in flour mixture and mix well.
    4. Blend in porridge oats, chopped cherries and chopped nuts. Mix well.
    5. Roll into balls the size of walnuts and slightly mash down. Bake to a golden brown, 8 - 10 minutes.

    Love the recipe, didn't use the nuts though but still nicd and really easy to make  -  04 Jul 2011


    Based on what others had said about the weak cherry flavor I exchanged 1/2 of the butter for strawberry applesauce(which also helped cut the fat) and use 1 & 1/2 tablespoons of the cherry juice.
