Very chewy granola bars

    Make these chewy granola bars into your own creation by adding different ingredients. Instead of the 340g chocolate chips, you can use any combination of chocolate chips, sunflower seeds, sultanas, dried fruits, sesame seeds, chopped nuts, etc. Just measure out your combination to 340g. You can also try using wholemeal flour.

    Serves: 18 

    • 370g porridge oats
    • 125g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon vanilla extract
    • 150g butter, softened
    • 175g honey
    • 5 tablespoons dark brown soft sugar
    • 340g plain chocolate chips

    Prep:15min  ›  Cook:20min  ›  Extra time:10min cooling  ›  Ready in:45min 

    1. Preheat oven to 170 C / Gas 3. Lightly grease a 20x30cm baking dish.
    2. In a large mixing bowl combine the oats, flour, bicarb, vanilla, butter, honey and dark brown soft sugar. Stir in the 340g chocolate chips, sultanas, nuts etc.
    3. Lightly press mixture into the prepared dish. Bake at 170 C / Gas 3 for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into slices. Let bars cool completely in dish before removing or serving.

    Really lovely recipe, but I melted the butter in a very large saucepan, added the honey and vanilla extract, combined all the dry ingredients in a separate bowl, then stirred in the dry ingredients to the melted butter etc. I then pressed it into the baking tin and baked as directed. I used a mixture of seeds and dried berries and this was really delicious. I've made it several times and it's always a winner.  -  19 Nov 2014


    I used half the quantities of the ingredients and added fresh ready granola, mixed with oats (as it says in the recipe plus peanuts and chocolate chips! Turned out amazing!!!  -  24 Mar 2014
