About this recipe: A lovely traybake that results in irresistibly chewy biscuit-like slices. Very simple to make and really nice with a cuppa. Cut into slices or bite-sized squares. You can try using pecans instead of walnuts, if desired.


Serves: 12 

  • 2 tablespoons butter
  • 220g dark brown soft sugar
  • 110g chopped walnuts
  • 5 tablespoons plain flour
  • 1/8 teaspoon bicarbonate of soda
  • 1/8 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 5 tablespoons icing sugar for decoration

  1. Preheat oven to 180 C / Gas 4.
  2. In a 23cm baking tin, melt the butter.
  3. Stir together the dark brown soft sugar, nuts, flour and salt. Add the eggs and vanilla. Carefully pour the flour and egg mixture oven the melted butter. DO NOT STIR!
  4. Bake at 180 C / Gas 4 for 20 to 25 minutes. Once out of the oven, sift icing sugar over top. Placed greaseproof paper under a wire rack, immediately invert tin onto rack. Let cool then dust again with icing sugar. Cut into slices.
