Rich peanut butter blondies

    A wonderfully nutty and rich recipe for peanut butter blondies. These taste fantastic. For extra richness, add a drizzle of chocolate icing over the top of these blondies, or cover in melted chocolate. You can also add about 150g of chopped chocolate or chocolate chips to the mixture before baking. Made with margarine, these are also dairy free.

    • 130g peanut butter
    • 75g margarine, softened
    • 125g caster sugar
    • 110g dark brown soft sugar
    • 2 egg
    • 1/2 teaspoon vanilla extract
    • 125g plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt

    1. Preheat oven to 180 C / Gas 4 and grease a 23cm square baking tin.
    2. In a medium bowl, cream together peanut butter and margarine. Gradually blend in the dark brown soft sugar, caster sugar, eggs and vanilla; mix until fluffy. Combine flour, baking powder and salt; stir into the peanut butter mixture until well blended.
    3. Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.
