Peanut butter chocolate chunk cookies

    Very chewy and moreish chocolate chunk cookies, studded with chopped plain chocolate and enriched with a hint of peanut butter. These are simply divine and can be frozen for packed lunches or weekend treats.

    Serves: 24 

    • 110g butter, softened
    • 130g peanut butter
    • 220g dark brown soft sugar
    • 100g caster sugar
    • 2 eggs
    • 2 tablespoons golden syrup
    • 2 tablespoons water
    • 2 teaspoons vanilla extract
    • 310g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 340g chopped plain chocolate

    1. Preheat oven to 190 C / Gas 5.
    2. In a large bowl, cream together the butter, peanut butter, dark brown soft sugar and caster sugar until smooth. Beat in the eggs one at a time, then stir in the golden syrup, water and vanilla. Combine the flour, bicarbonate of soda and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by heaping spoonfuls 7cm apart onto ungreased baking trays.
    3. Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the baking tray before removing to wire racks to cool completely.

    Delicious - and very easy. Halved the recipe and worked well still. Nice and chewy if you don't cook for too long  -  01 Feb 2014


    Gorgeous - my partner and son love them - but they want more peanut butter in....So I'm going to put slightly less normal butter and slightly more peanut butter next time!!!  -  13 Feb 2012
