    About this recipe: Chicken breasts simply marinated in red wine, then seasoned and pan fried. A simple yet very tasty dish that requires little time in the kitchen.

    Serves: 4 

    • 4 skinless chicken breast fillets
    • 180ml red wine
    • 1/2 tablespoon chopped fresh basil
    • 1/2 tablespoon paprika
    • 1/3 tablespoon garlic salt
    • salt and pepper to taste
    • oil for frying

    1. To Marinate: Place chicken in a nonporous glass dish or bowl. Pour wine all over and toss to coat. Cover dish or bowl and refrigerate to marinate for at least 2 to 3 hours.
    2. Remove chicken breasts from wine (discard any remaining wine) and season with basil, paprika, garlic salt, salt and pepper.
    3. Heat oil in a medium frying pan over medium high heat. Add chicken and saute on each side until a nice brown/red colour is reached and the inside is no longer pink (20 to 30 minutes).

    Lovely recipe. Tweak - I had a heart attack when I read "discard remaining wine" I took the wine, strained it and turned it into a red wine sauce, it made a great accompaniment. - 12 Feb 2014
