500g penne pasta
1 tablespoon butter
6 skinless chicken breast fillets - cut into 2.5cm cubes
1/2 teaspoon ground black pepper
1/4 teaspoon salt
225ml Caesar salad dressing
60ml red wine vinegar
40g grated Parmesan cheese
1 cos (romaine) lettuce - rinsed, dried and shredded
1 large tomato, chopped

Bring a large pot of lightly salted water to the boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
Melt butter in a large frying pan over medium heat. Add chicken, pepper and salt. Cook 10 minutes or until chicken is cooked through. Remove frying pan from heat.
In a bowl, mix together salad dressing, vinegar and Parmesan cheese. Toss together pasta, chicken, lettuce and dressing mixture. Place in large serving bowl, and sprinkle with tomato.
