About this recipe:This is not your normal prawn cocktail! This recipe calls for lots of fresh coriander, cucumber, spring onions and chilli which gives the classic a Mexican flavour boost. It's a great colourful starter for a summer dinner party.
500g (1 1/4 lb) cooked medium prawns, chilled
1/2 large cucumber, diced
1 small tomato, diced
8 spring onions, thinly sliced
good handful fresh coriander, finely chopped
1 chilli, thinly sliced
1/3 (600g) jar passata
2 tablespoons red wine vinegar
shredded lettuce or sliced celery

In a large bowl, combine prawns, cucumber, tomato, spring onion, coriander and chilli. Stir in passata and vinegar. Squeeze lime juice over mixture.
Serve in glasses with shredded lettuce or slices of celery.

My family really enjoyed this recipe. I also added 1/2 an avocado. The only thing lacking was a little extra heat so next time I'll use 2 chillies instead of just 1. - 14 Jul 2008
