Quinoa with Chicken and Fresh Veggies

    55 min

A delicious all-in-one dish that combined chicken, veg and healthy quinoa. It could probably be done well with prawns also. You could easily try different veg, especially if you can't find garlic scapes. Garlic scapes are the green, immature stalk of the garlic bulb, with a crunchy texture similar to asparagus.

    Serves: 4

    • 175g rinsed quinoa
    • 475ml chicken stock
    • 2 tablespoons extra-virgin olive oil
    • 2 garlic scapes, chopped
    • 1 small onion, chopped
    • 2 skinless chicken breast fillets - cut into strips
    • 2 tablespoons extra-virgin olive oil
    • 1 courgette, diced
    • 1 tomato, diced
    • 110g crumbled feta cheese
    • 8 fresh basil leaves
    • 1 tablespoon lime juice

    1. Bring the quinoa and chicken stock to the boil in a saucepan; reduce heat to a simmer and cover the pan. Simmer until the stock is absorbed, the quinoa is fluffy, and the white line is visible in the grain, about 12 minutes.
    2. Heat 2 tablespoons of olive oil in a frying pan; cook and stir the garlic scapes and onion until onion is translucent, about 5 minutes. Stir in the chicken breast strips and cook until the chicken is still slightly pink in the middle, about 5 more minutes. Remove the chicken and set aside.
    3. Pour 2 more tablespoons of olive oil in the frying pan and cook and stir the courgette and tomato until the courgette is tender, 5 to 8 minutes. Return chicken to frying pan and sprinkle with feta cheese, basil leaves and lime juice. Cook until the chicken is fully cooked and hot, about 10 more minutes. Serve over hot quinoa.

YUM. This was so easy to make, very refreshing meal. Had cooked with quinoa before and it did not go down well with family but this recipe was a success. So much so 8 year old child asked for the leftovers for her lunch at school. Will become a staple meal here  -  13 Jun 2013

Absolutely delicious! I substituted a number of things: shrimp for the chicken because I needed to use it up, broccoli for the zucchini, added 1 more tomato because they were on the small side, and mozzarella for the feta. I also didn't use the second 2 tablespoons of olive oil. And I used 2 garlic cloves minced. It only took me 45 minutes to get it on the table after receiving this recipe in my e-mail wondering what to cook for dinner. It was a lifesaver. My husband said it was as good as going out for a nice dinner. A very versatile recipe.  -  08 Sep 2010  (Review from Allrecipes US | Canada)

Great taste! The feta melts slightly and blends in with the veggies. Don't add too much extra salt, I added just a bit and was surprised by how much extra flavor the feta gives the dish. I also cut down on the amount of chicken; the quinoa gives protein, so it is a very filling dish.  -  27 Jul 2010  (Review from Allrecipes US | Canada)
