Date cake with chocolate nut topping
A very rich and moist cake, made with dates, then topped with a mixture of chopped walnuts and chocolate chips. You can use other nuts - such as pecans - and use chopped chocolate instead of chips.
Ingredients

- 150g pitted dates, chopped
- 1 teaspoon bicarbonate of soda
- 250ml water
- 200g caster sugar
- 250g plain flour
- 250g mayonnaise
- 1 pinch salt
- 110g dark brown soft sugar
- 60g chopped walnuts
- 85g plain chocolate chips

- Preheat oven to 180 C / Gas 4. Lightly grease one 20x30cm baking tin.
- Bring water to the boil. Pour over chopped dates and bicarb. Let stand until cool. Stir in the sugar, flour, mayonnaise and salt. Mix until just combined. Pour cake mixture into prepared tin.
- Mix the dark brown soft sugar, chopped nuts and chocolate chips together. Sprinkle over top of cake.
- Bake at 180 C / Gas 4 for 40 to 45 minutes.

This recipe sounds like the one my Mother use to make when I was a young girl. After her death her recipes were lost in the moving. I do remember that my mother never did anything with the topping until after the cake was baked, she would put the topping on after the cake was baked then popped it back in the oven and broiled it. It always came out wonderful. I will try this recipe and see if it is the same as my Mothers. Thank You so Very Much for posting this recipes.
