    About this recipe: Chocolate chip cookies with a bit of crunch, thanks to the addition of crispy rice cereal. Kids will especially love these moreish, crispy chocolate cookies!

    Ingredients
    Serves: 36 

    • 225g unsalted butter
    • 300g light brown soft sugar
    • 2 eggs
    • 4 teaspoons water
    • 1 1/2 teaspoons vanilla extract
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 650g plain chocolate chips
    • 60g crispy rice cereal

    Method
    Prep:30min  ›  Cook:10min  ›  Ready in:40min 

    1. Preheat oven to 180 C / Gas 4. Grease baking trays.
    2. In a medium bowl, cream together the butter and dark brown soft sugar until smooth. Beat in the eggs, one at a time, then stir in the water and vanilla. Combine the flour, baking powder and salt, gradually stir into the creamed mixture. Fold in the chocolate chips and crispy rice cereal. Drop by rounded spoonfuls onto the prepared trays.
    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    I have very mixed feelings about this recipie. First off, there was way too many chocolate chips. I love chocolate but this was over kill. Maybe if you used milk chocolate it wouldn't be as bad. I did like the rice crispies in them. It was different but it didn't make these cookies as unique and unordinary as I thought they would be. One hint, when they come out of the oven after 10 minutes, they really appear to be raw. I found that after sitting on the pan for 5 minutes and then cooling down that they did firm up but I still ended up baking most of them for 12 minutes and prefered the end result of those ones better. I might make these cookies again, but i will definetly be cutting down the chocolate or changing it to milk so they are not as rich.  -  22 Jan 2003  (Review from Allrecipes US | Canada)

    I liked the idea of this cookie, but didn't have some of the ingredients on hand. I took the advice of another reviewer and halved the choco chips, but used Cocoa Krispies instead of Rice Krispies. Something seemed to be missing and it wasn't sweet enough, though, so added another 1/4 cup white sugar, 1/4 cup chocolate syrup, and 1/4 cup peanut butter. The cookies came out pretty tasty then.
