Oat Chocolate Chip Cookies for a Crowd

    These are easy to make oat and chocolate chip cookies, which are moreish and delicious. This recipe yields 11 dozen cookies, so it's a great recipe for a cake sale. You can also freeze them with great success.

    Makes: 11 dozen cookies

    • 450g butter, softened
    • 240g icing sugar
    • 4 teaspoons vanilla extract
    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 160g porridge oats
    • 340g plain chocolate chips

    1. Preheat the oven to 170 C / Gas 3.
    2. In a medium bowl, cream together the butter, icing sugar and vanilla until smooth. Combine the flour and bicarb; stir into the creamed mixture. Mix in the oats and chocolate chips. Roll into walnut sized balls. Place balls 5cm apart onto ungreased baking trays and press to flatten slightly using a fork.
    3. Bake for 10 to 12 minutes in the preheated oven, until edges are golden brown. Remove from cookie sheets to cool on wire racks.

    These really are melt in your mouth cookies. You can never just eat one. My husband makes these for me when I am craving something chocolaty and sweet!
