    These chocolate muffins are pure bliss for the chocolate lover in everyone. Chocolate muffins are studded with chocolate chips, which are deliciously melty when you have these muffins warm from the oven.

    Serves: 12 

    • 170g plain chocolate
    • 75g unsalted butter
    • 175ml buttermilk
    • 100g caster sugar
    • 1 egg
    • 1 1/2 teaspoons vanilla extract
    • 210g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 170g plain chocolate chips

    1. Preheat the oven to 200 C / Gas 6. Line 12 muffin cups with cases.
    2. In a small saucepan over low heat, melt the plain chocolate together with the butter. Let stand until cooled, about 10 minutes.
    3. Lightly beat the egg. In a small bowl, stir together the chocolate-butter mixture with the buttermilk, sugar, egg and vanilla, until blended well.
    4. In a large bowl, stir together flour, bicarb and salt. Make a well in the centre of the dry ingredients, pour in the chocolate mixture, and stir until just combined (don't over-mix). Stir in the chocolate chips. Spoon the muffin mixture into the muffin cases.
    5. Bake at 200 C / Gas 6 for 20-25 minutes or until a skewer inserted in the centre of a muffin comes out clean. Remove muffin tin from oven and let stand at least 5 minutes, before removing the muffins and letting them cool on a wire rack. Serve warm or cooled; can be frozen as well.

    This recipe produces some really tasty muffins, although they are very rich and extremely high in calories, 293 to be exact. But as a once in a while treat these are just the thing. I used this recipe to make a batch of jumbo american size muffins, which turned out really well. Although each one of those is a staggering 587 calories.  -  18 Aug 2011
