    About this recipe: A very chocolaty icing that is rich and gooey, thanks to the addition of marshmallows. Kids will love this on a birthday cake or on cupcakes. Use plain marshmallows or marshmallow fluff, if you can find it.

    Serves: 12 

    • 500g caster sugar
    • 250ml evaporated milk
    • 170g plain chocolate, chopped
    • 110g butter
    • 100g plain marshmallows

    1. In a saucepan over medium heat cook sugar and evaporated milk to the soft ball stage (114 degrees C). Stir in the chocolate, butter and the marshmallows. Stir until all are melted. Remove from heat and beat icing until cool. Use to ice cake immediately.
