Marshmallow Chocolate Icing

    A very chocolaty icing that is rich and gooey, thanks to the addition of marshmallows. Kids will love this on a birthday cake or on cupcakes. Use plain marshmallows or marshmallow fluff, if you can find it.

    Serves: 12 

    • 500g caster sugar
    • 250ml evaporated milk
    • 170g plain chocolate, chopped
    • 110g butter
    • 100g plain marshmallows

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. In a saucepan over medium heat cook sugar and evaporated milk to the soft ball stage (114 degrees C). Stir in the chocolate, butter and the marshmallows. Stir until all are melted. Remove from heat and beat icing until cool. Use to ice cake immediately.

    I made this recipe tonight and it came out really nice. I took the advice of one of the other members and only used 1 cup of sugar. I also got tired of waiting for the sugar and evaporated milk to thicken, so after about 10-20 mins of waiting I added the other ingredients. I put it in the kitchen aid mixer while it cooled off. It has a fantastic flavor and it's not very thick. It drizzled down the side of my cake and I have a feeling that the icing will still be soft tomorrow. Great recipe!
