About this recipe: This is a chocolate icing with a lovely softness to it. Use on chocolate cake or cupcakes, or on a simple vanilla cake. You could add instant coffee granules if you want a chocolate mocha icing.

OK. This has turned out to be the most wonderful wonderful chocolate icing. However MINUTE icing it is not. Maybe it was the fact that I was in someone else's kitchen. Maybe it was because I was entertaining someone else's children helping them to make it - icing sugar and chocolated implements everywhere and lot and lots and lots of laughter. Maybe it was because I agonised over when to add the butter because it was in two places in the method (I heated it in the boiling mixture). The mixture went thick with the hand beater and went on the cake (NZ Edmonds cookbook chocolate cake yum recipe). It all looks wonderful and tastes amazing. 30 minutes making it/using it start to finish. 3 hours tidying up (including chocolate children). Thank you! - 18 Aug 2013
