Minute chocolate icing

    This is a chocolate icing with a lovely softness to it. Use on chocolate cake or cupcakes, or on a simple vanilla cake. You could add instant coffee granules if you want a chocolate mocha icing.

    Serves: 18 

    • 200g sugar
    • 5 tablespoons evaporated milk
    • 4 tablespoons unsweetened cocoa powder
    • 90g butter or margarine, softened
    • 1 teaspoon vanilla extract

    Prep:5min  ›  Cook:1min  ›  Ready in:6min 

    1. Place the sugar, evaporated milk, cocoa and margarine into a saucepan. Bring to the boil over medium heat, stirring constantly. Once the mixture is boiling, continue cooking and stirring for 1 minute.
    2. Remove from heat, and add butter and vanilla. Beat with an electric mixer until thick, and use immediately.

    OK. This has turned out to be the most wonderful wonderful chocolate icing. However MINUTE icing it is not. Maybe it was the fact that I was in someone else's kitchen. Maybe it was because I was entertaining someone else's children helping them to make it - icing sugar and chocolated implements everywhere and lot and lots and lots of laughter. Maybe it was because I agonised over when to add the butter because it was in two places in the method (I heated it in the boiling mixture). The mixture went thick with the hand beater and went on the cake (NZ Edmonds cookbook chocolate cake yum recipe). It all looks wonderful and tastes amazing. 30 minutes making it/using it start to finish. 3 hours tidying up (including chocolate children). Thank you!  -  18 Aug 2013

    This recipe was perfect! I was a little hesitant since the other reviews said it didn't thicken, however, I was delightfully surprised when it did. I beat it with the mixer for approx 5 mins & it turned out delicious & beautiful! It isn't super, sickening, sweet & it makes the perfect amount of icing for a 9x13 sheet cake.
